| BREAD PAKORAS |
| Ingredients: Make the besan butter
by mixing water and kasturi methi, salt & ajwain as per
taste preferably it should be thick. Then take the slice of
bread put some tomato sauce on the slice along with boiled potato
mixture (which includes Aamchoor, garam masal, ginger garlic
paste then put another plain bread slice on the top and make
it looks likes sandwich then dip the bread slice filled with
potatoes masala in the besan better and then spread one aluminium
foil paper of thicker guauge and spread one table spoon of oil
for greasing the foil paper so that the pakora doesn't get stick
on the foil paper and bake it in the tandoor for 10 to 12 minutes,
its ready to serve with some pudina chutney lemon and onion
sliced. |

| STUFFED CAPSICUMS |
Ingredients: 8-10 medium capsicums
of equal size, 100 gms. tomatoes, 1 medium onion, 2 green chillies
minced, coriander leaves, 1 tea spoon garam masala, 2 cups cooked
rice, 10 roasted cashew-nuts chopped, 25 gms resins sliced,
100 gms. Grated cheese, salt and chili powder & a small
piece of ginger. Method: Grind onions,
chillies, coriander, a small piece ginger together, put sliced
tomatoes along with spices, salt & ground paste in a pan
and cook till thick. Put, in half the cheese and heat till cheese
is melted. Mix in rice, nuts and raisins, slice stalk end of
capsicum and simmer the for a minute in boiling water. Drain
and fill with rice mixer. Keep in the greased drip. Top with
remaining cheese. Place on the tray with aluminum foil, grease
its surface and put into the tandoor for 3-5 minutes. Than take
out and serve. Precaution: Don't preheat
the tandoor. Kindly take care that foil doesn't touches the
heating coil above. |

| STUFFED BHINDI |
| Ingredients: Bhindi 200gms.,
salt 25gms., red chilli 25gms., dhania powder 25gms., amchur
25gms., garam masala 25gms., oil 25gms.
Method: Wash and dry bhindi with dry cloth.
Cut both ends and slit the bhindis length wise. Mix all the
dry masalas together and fill into the bhindis. Spread foil
paper on the preheated tray and apply one teaspoon oil for
cooking bhindi. Cook it for 7-8 minutes and then switch off
the tandoor. Take out bhindi to serve after 10 minutes. |

| BAKED VEGETABLES |
| Ingredients: 100 gms French beans,
100gms. Carrots, 100 gms. Cauliflower, 1 large potato , one
small cabbage, two small tomatoes cut in slices, 3 tablespoons
maida, 1/4th cup milk, ½ teaspoons mustard, ½
teaspoon pepper, salt to taste, ¾ tablespoons butter,
3-4 tablespoon grated cheese.
Method: Wash and dice all vegetables, cabbage,
make white sauce as in the above recipe. Add one-half of the
grated cheese. Cut the cabbage very finely and mix in with
the rest of these vegetables. Add white sauce to these and
place them in a greased baking dish. Top it with grated cheese
and sprinkle a little salad oil. Place on the tray with aluminium
foil and put into the shelf of the tandoor for 4 to 5 minutes
first, then allow it to cool down for 3 minutes and then heat
for 3-4 minutes again before serving.
Precaution: Preheat the tandoor for 3-4
minutes. Kindly take care that foil doesn't touches the heating
coil. |

| THIN CRUSTY HOME MADE PIZZA BASE |
| Ingredients: ¼ th cup
luke warm water, ½ tsp. Sugar, 2 tsp. heaped dried yeast
(10 gms.), 1/4th cup milk, 1 ½ tbsp. Refined oil, 1 tsp.
Salt, 1tsp. Sugar, 300 gms. (3 ½ cups) maida flour.
Method:
1.Mix warm water, add sugar in a cup. Feel the water with
a finger to check if it is lukewarm. Add yeast. Shake the
cup gently to mix the yeast. Cover it and leave it in a warm
place till the granules of the yeast disappear and it becomes
frothy. 10 minutes. (If it does not swell, discard it).
2. Mix milk, oil, salt and sugar in a pan. Keep aside when
the yeast becomes frothy, heat this milk mixture to make it
lukewarm.
3.Add the ready yeast mixed to the lukewarm milk mixture.
Add this yeast and milk mixture to the maida and knead well
to make a smooth dough.
4.Grease a big polythene, brush the dough with a little oil
and keep it back in the polythene for another one minute or
till it swells again. Make three balls. Flatten each on a
10 “ square greased aluminum foil to a thin round pizza,
even thinner than 1/4th “ . Pick each base with a fork.

| PIZZA CHEESE |
| Take Pizza Cheese ( cheddar cheese) and base from
any reputed bakery shop. Spread tomato sauce on pizza base and
sprinkle salt as per your taste. Spread vegetable rings (onion,
cauliflower, tomatoes and capsicum).
Mash cheddar cheese on top of pizza. Spread aluminum foil
and place the pizza on it. Switch on the tandoor. Let it be
on for 2-3 minutes and then switch it off. Let it cool for
atleast 2-3 minutes. Take out the brown crispy pizza. Its
ready to serve
Precaution: Preheat the tandoor for 3-4
minutes. Kindly take care that foil doesn't touches the heating
coil. |

| PAPAD/ BREAD ROASTING |
| Place bread slices on the tray and switch on the
tandoor. Let it go for minutes. If necessary turn the slices.
In case the tandoor is already hot then you don't have to turn
the slices. For better results you can put the slices on aluminum
foil also.
Precaution: Preheat the tandoor for 3-4
minutes. Kindly take care that foil doesn't touches the heating
coil. |

BISCUITS/COOKIES
PEANUT COOKIES |
| Ingredients: 1 cup peeled and
crushed peanuts, 1/3cup butter or dalda, 1 cup flour, ½
cup sugar, 1 egg, 1 tsp baking powder.
Method: Sift together flour and baking powder.
Beat softened butter or dalda and sugar untill fluffy. Add
beaten egg, peanuts and flour to this mixture form into small
balls and flatten slightly. Grease the aluminium foil &
put them into the tandoor for 3-5 minutes. Heat till they
are golden brown. Then, allow the cookies to cool before eating.
Precaution: Don't preheat the tandoor. Kindly
take care that foil doesn't touches the heating coil above.

| SWEET PLAIN BISCUITS (BASIC RECIPE) |
| Ingredients: Flour 50 gms, Butter
25 gms, sugar powder 25 gms Baking powder ¼ tsp, Egg
¼ tsp, Milk to make the dough (approx, 1 tsp).
Method: Sieve flour and baking powder together.
Beat egg and mix the butter and sugar till the mixture becomes
light and fluffy. Add the flour and beat the above mixture
and make the dough, if necessary add milk. Roll out the dough
on floured board into ¼'' thickness. Cut into biscuits
and prick each biscuit with a fork. Place on a greased aluminium
foil and put it on the tray bake it for 15-20 minutes till
golden brown colour.

| EGGLESS VANILA CAKE |
| Ingredients: Milkmaid/Amul Milk
methai 200 gms., Milk 125 ml., Maida 125 gms. Sugar Powder 2
tablespoon, Mitha soda ½ Tea spoon, (soda-bi-carb) Vanilla
Essencel Tea Spoon.
Note: If you want to add. Egg-2 nos., so
instead of milkmaid add eggs.
Method: Sieve Flour, baking powder and soda
bi-carb (Metha soda) together. Keep aside. Beat butter, sugar
powder and vanilla essence till butter turns fluffy. Add milk
and condensed milk and Beat well. Add flour gradually mixing
well after addition. Beat well 4-5 minutes till the mixture
is light and fluffy. Grease a large cake tin with butter and
then sprinkle 1 tsp flour to dust the tin Transfer the cake
mixture to the prepared tin. Bake for about 10 to 15 minutes
till the p of the cake becomes brown. Allow to cool off in
the tandoor for 3 to 5 minutes Insert a clean switch off the
tandoor. Remove it from after 5 minutes.
ROASTED/ TANDOORI/BAR-BE-QUE
ROASTED CHICKEN
Take one kg. Chicken ,cut it into small pcs. Preferably 8
pcs. For the chicken. Marinate as you like, spread aluminum
foil on the tandoor tray, grease it. You can place chicken
directly on aluminium foil. Switch on the tandoor continuously
for 5-6 minutes. Switch it off and let it cool down for 5-6
minutes. Open the tray. Give some deep cut on the chicken
pieces grease the chicken and close the tandoor, switch it
on for 2-3 minutes as tandoor and you will find brown crispy
pcs. Sprinkle some chat masala or fresh lemon. Its ready to
serve.
Precaution: Preheat the tandoor for 4-5
minutes. Kindly take care that foil doesn't touches the heating
coil.

| CHICKEN TIKKA |
| Ingredients: 750 gms preboiled
boneless meat, cut into ½ inch cubes, 8 small tomatoes
(hard), 12 small onions (half boiled). For Marinate, Two tablespoon
chopped fresh mint, ½ cup vinegar, pinch of dry mustard,
one teaspoon grated lemon ring. ½ teaspoon salt, two
tablespoon butter, ½ cup wine (optional). Place all ingredients
except wine in a sauce pan and bring to boil. Take off heat
and allow to stand for half an hour then add wine.
Method: Place meat in a dish and cover with
marinade. Allow to stand for 2-3 hours. Drain the meat and
thread on skewers alternating with tomatoes and onions. Place
in the tandoor after placing the foil paper & greasing
it & then toast. Turn frequently and brush with a little
fat. Roast for 15-20 minutes till tender. Can be used as cocktail
snacks as they are hot and juicy.

| FISH TIKKA |
| Ingredients: 500 gms fresh fish
(cleaned, and cut. To 1-1/2 inch thick pieces), juice of 6 cloves
of garlic, 4 tsp. Curd, salt and chilli powder to taste, juice
of 1 lemon, ½ tsp ajwain, a little orange colour.
Method: Mix all ingredients and into fish
pieces. Keep aside for half-an hour. Place the fish on to
the lightly greased aluminium foil. Place in the tandoor and
grill for about 15 minutes. Sprinkle with meat masala and
serve immediately.
